Irish Mashed Potato

In following with my (unnatural) obsession with the worldly variations of the humble mash potato here is a terrific recipe for the Irish Mashed Potatoes. If this doesn’t tickle your fancy you could try theHungarian Mashed Potato Recipe or perhaps the French Mashed Potato is more your style?


Ingredients:
6 large potatoes
1 cup of milk
1 leek, cleaned and chopped
Salt and pepper to taste

Method:

    1. Put the peeled and cut potatoes into a pot a cover with water. Cook until done
    2. In a seperate pot cook the leeks in the milk, for about 15 minutes. continuously stir so as to evenly cook
    3. Using a collander drain the potaoes and add to the pot of leeks and mash. Season to tatse
    4. Enjoy with a glass of whiskey.
