The Hungarian Mashed Potato, as the name might suggest, comes from Hungary. Many nationalities have there own take on the humble mashed potato, this simple yet delicious variation calls for the addition of an egg.

8 potatoes, peeled and cubed
1/4 cup butter
1/2 cup sour cream
1 egg
Salt to taste
Method:1. Cover the prepared potatoes in water and cook until soft. Drain
2. Mash the potatoes, after adding the butter
3. Blend in the sour cream – quantity may need to be varied depending on the size of your potatoes
4. Add the egg and whip through, salt to taste.
5. All done - Enjoy

Note of warning: Due to the risks of salmonella poisoning it is recommended that you ensure that the egg you use has been properly refrigerated, is clean and has its shell is undamaged. At all times you should try to avoid contact between the yolks/whites with the outside of the shell.
