I love artichoke mashed potatoes. I’m also a huge fan of rosemary, especially the texture it can add to a meal. If you’re not that keen on rosemary you could omit it from this recipe or alternatively boil a sprig of rosemary along with the potatoes and remove and discard prior to mashing. This way you get the full flavour and aroma of the rosemary, but maintain a smooth mash consistency.
Ingredients:
6 – 8 large mashing potatoes, peeled and cubed
170g (6 Oz) of marinated artichokes, minced
2 Cloves of garlic, peeled
1 tablespoons of dried rosemary
1 Cup of milk
Pinch of salt
Method:1. In a medium sized saucepan cook the potatoes, garlic and the salt, covered, in enough boiling water to cover for 20 to 25 minutes or until tender.
2. Drain and remove the garlic.
3. Mince the garlic and return to the pot along with the potatoes
4. Add the artichokes and milk.
5. Mash
6. Stir through the rosemary and season to taste. Enjoy!
