Creamy Baked Mashed Potatoes

Hearty, delicious, filling and cheap! This Creamy Baked Mashed Potatoes recipe is sure to win hearts everywhere!


Ingredients:
6-7 mashing potatoes, peeled & cubed
1 Envelope of Vegetable Soup
1 Cup of Swiss cheese, grated
1/2 Cup of Green Onion, chopped
1 egg
Salt & Pepper

Method:

    1. Prewarm the oven to medium-hot
    2. Add the potatoes to a large pot with enough cold water to cover them by an inch or so. Add salt and bring the water to boil. Cook until the potatoes are tender when pierced with a knife. (About 15 minutes)
    3. Turn the potatoes into a buttered casserole dish, combining all of the ingredients except 1/4 cup of the cheese. Mash well. Add salt and pepper to taste. Dot with butter.
    4. Bake for 35 minutes. Top with remaining the cheese and bake for an additional 5 minutes or til cheese is melted.

Mashed Garlic Potatoes

Garlic. Mashed Potatoes. Garlic mashed potato. Absolutely scrumptious. Totally unbeatable.



Ingredients:
6-8 medium sized potatoes
6 large cloves of garlic unpeeled
1/4 cup of olive oil
Salt and pepper to taste

Method:

    1. Peel potatoes or not depending on your taste. Cube and place in a pot of water
    2. Boil the potatoes and garlic cloves in a large pot of water for 30 minutes or till done.
    3. Drain and squeeze out garlic from skins. Mash the potatoes and garlic coarsely. Add in the olive oil and mash more thoroughly.
    4. Add salt and pepper to taste (I like to add a very generous amount of freshly ground pepper).
    5. Serve straight away to best enjoy

Duchesse potatoes

Have a hungry stomach? Then this Duchesse potato mash recipe is sure to set you at ease. Enjoy!



Ingredients:
4 pounds of large red potatoes
6 tablespoons of butter
1 1/4 cups of milk
3 large egg yolks


Method:

    1. Preheat the oven to 400°F
    2. Peel and quarter the potatoes. Then, in a large saucepan, cover with cold water by about 2 inches (add a pinch of salt)
    3. Cook potatoes in a large pot of boiling salted water about 30 minutes, or until very tender.
    .4. Whilst the potatoes are simmering, in a small saucepan heat the butter with milk over a moderately low heat until melted and keep warm.
    5. Drain the potatoes in a colander and force through a ricer or food mill into a large bowl. Beat in the milk mixture, yolks.
    6. Season to taste
    7. Spread 1/3 of the potatoes in a buttered 1-quart gratin dish. Transfer the remaining potatoes into a pastry bag fitted with a ¾ inch star tip.
    8. Pipe the remaining potatoes into the dish from the bag
    9. Bake uncovered for 30 minutes or till golden brown on top.

Cream Cheese Mashed Potatoes

Ingredients:
5-6 Potatoes
1/4 cup of butter
1/2 a cup of cream cheese
1 green pepper, Chopped
1 bunch of scallions, sliced
1 Jar of Pimientos, retain liquid
1/2 Cup of Cheddar cheese., grated
1/2 Cup of Parmesan cheese

Method:

    1. Pre-warm the oven to a medium-hot temperature
    2. Make your mashed potatoes in the usual fashion
    3. Add all ingredients to potatoes, constantly beating.
    4. Season to taste
    5. Bake in oven-proof serving dish uncovered for 30 minutes.
    6. Serve whilst still warm and enjoy

Twice cooked Mashed Potatoes

Twice cooked mashed potatoes for twice the flavour! Serve immediately for peak flavours and texture.


Ingredients:
6-8 medium potatoes
1 cup of Cheddar cheese, shredded
2 cups of heavy cream
Salt and pepper to taste

Method:

    1. Boil the potatoes with the skin left on
    2. Once cooked drain and let cool. Then peel and shred the potatoes
    3. Stir through the cheese and pour the cream over the top.
    4. Refrigerate overnight
    5. Bake on a Medium-High for about 30 minutes till done and enjoy
