The French mashed potato is a similar to a basic potato mash, with a couple of slight divergences. For that little something extra, the French mash goes great with a little sprinkle of goat cheese over the top.
Ingredients:
1kg of Potatoes (a little over 2 pounds) of potatoes
1 cup of half and half (half milk & half cream)
5 tablespoons of butter
1/2 teaspoon baking powder
1/4 cup of minced onion
Salt and pepper, to taste
Method:
    1. Peel and Cube the potatoes
    2. Add salt and bring the water to a boil.
    3. Cook until tender (approx 15 minutes)
    4. Drain the potatoes and return them to the pot
    5. Mash by your method of choice.
    6. Blend in your Butter and milk
    7. For a little French flavour add in minced onion and Baking power
    8. Season and Enjoy!
