This is a fairly generic recipe for Vegetable Mash – you could add or remove vegetables depending what is in season or what you have available in your pantry. Vegetable Mash is both inexpensive and healthy.
Ingredients:
1 Swede or Rutabaga
2 carrots
2 mashing potatoes
1 cup of Milk
Finely Chopped fresh parsley
Method:1. Peel the potatoes, Swede (Rutabaga) and Carrots and cut them into equal sized pieces.
2. Place them into a saucepan and cover with the water. Add a large pinch of salt.
3. Bring to the boil and simmer the vegetables gently until tender
4. Drain and Mash the Carrots, Swede and Carrots with a fork, adding Milk.
5. If the mixture is too thick, add more milk 1 tablespoon at a time until a good uniformity
6. Sprinkle with Parsley and serve at once, or reheat the puree briefly before serving.
