Thai Mashed Potatoes Patties

Of all cuisines around the world, I have a special place for delicious Thai! This is a great way to use up your leftover mashed potatoes (if you ever have any!)


Ingredients:
left over mashed potatoes
1 can can of tuna (preferably in brine)
1 onion, finely chopped
Bread crumbs
oil for frying
1 tablespoon of Mint leaves, finely chopped
1/2 tablespoon of Fresh Coriander leaves, finely chopped
lime juice

Method:

    1. Combine all ingredients in a bowl
    2. Add bread crumbs last until you achieve a smooth but firm consistency
    3. Refrigerate for a few hours (this helps them to retain their form during the cooking)
    4. In a non-stick frypan add a little oil, place a small ball of mixture and firm down
    5. Once browned flip and repeat
    6. Serve with some sweet chilli sauce and Enjoy
