Baked Mashed Potatoes

Aint nothing more perfect than mashed potatoes. Unless its Baked Mashed Potatoes!


Ingredients:
8 mashing potatoes
1 cup of grated cheese
1 onion, finely chopped
Salt and pepper

Method:

    1. Dice the potatoes into small chunks and cook in a large pan of (salted) boiling water for 20 minutes or until softened.
    2. Drain and return potatoes to pot, add the cheese and Mash
    3. Add the onion, and whip through
    4. On a prepared buttered ovenproof casserole dish place the mash and bake in a medium to hot oven for about 30 minutes or until golden on top.
    5. Serve immediately and enjoy!
