Baked Mashed Potato

A great way to play with your favourite homemade mash potato recipe is to turn it into a baked mashed potato recipe!

Baked Mashed Potatoes


Ingredients:
6-8 large potatoes
1 cup of cream cheese
1 egg
1 onion, finely chopped
Seasoning to taste

Method:

    1. Cut the vegetables into even-sized chunks and cook in a large pan of boiling salted water for 20-25 minutes, until softened. Drain well.
    2. Return potatoes to pot, add cream cheese and Mash
    3. Add the egg and onion, and beat in
    4. Place mash into a buttered ovenproof casserole dish and bake in a hot oven for about 45 minutes or until slightly golden brown on top.
    5. Serve hot and enjoy!
