This easy twice baked mashed potatoes recipe can be varied to suit personal tastes. I often like to add some 1-tablespoon of chives and if I'm feeling naughty 1/2 a cup of parmesan cheese. Whatever takes your fancy, really.
Ingredients:
6 large potatoes
1/2 cup of sour cream
1/2 cup of grated cheese
1/2 cup of grated cheddar
green onions, sliced
2 tablespoons of butter
2 teaspoons of garlic salt
milk for smooth consistency
Method:1. With the skin on, bake the potatoes in a moderate to hot oven until well done (approximately 1 hour)
2. Once cooked cut the potatoes in half and hollow out the insides, leaving the shells to one side.
3. Place the inners into a bowl and mash, adding the sour cream, butter and cheeses.
4. Add milk to achieve a good consistency and continue to mash.
5. Add the chopped onions and garlic salt.
6. Spoon this mixture into to the empty half shells, and place back on the tray
7. Sprinkle with cheese and into the oven to warm for 20 – 30 minutes and your done!
8. Enjoy.
