Parsnip and Potato Mash pancakes are perfect as an entrée, or great as a snack too. They can be eaten cold, but I prefer them warm with a little mayo on top. Yum!
Ingredients:
4 parsnips
4 potatoes
1 medium to large carrot
6 spring onions, finely chopped
3 eggs
1/2 cup of plain flour
1 teaspoon of baking powder
Salt to taste
Vegetable oil
Method:1. Peel and cut the potatoes, parsnips and carrot into small manageable sizes.
2. Place in a steamer over boiling water. Cook for about 10 minutes or until done, then cool
3. Pace the cooked vegetables into a bowl and add the onions, eggs, baking powder, and flour.
4. Mash it.
5. Add salt to taste and stir through
6. Over moderate heat, place 2 - 3 tablespoons of oil into a frypan.
7. Pour the pancake mixture into the oil, cook for 3 minutes the flip the other side and cook for a further 3 minutes.
8. Put the pancakes into a warm oven for 10 minutes to allow them to crisp up.
9. Serve with a dollop of mayonnaise and enjoy
