Mash Recipies


Horseradish Mashed Potato

As with any of the potato mash recipes in this (growing) collection various ingrediants may be omitted or altered to suit personal taste. For example, the spring onion may be replaced with some fresh chives - or dried - fresh just tastes better in my opinion. Feel free to add a little more or little less cream, depending on your preferred taste and/or prefered waiste size!


Ingredients:
8-9 medium sized potatoes
4 cloves of garlic, skin peeled
3/4 cup of thickened cream
1/4 cup of butter
4 tablespoons of prepared horseradish
1/4 cup of sping onions, chopped
Salt and pepper

Method:
    1. Peel and wash the potatoes, and cut into small 1-2 inch pieces.
    2. In large saucepan boil the potatoes, full garlic cloves and 1/2 teaspoon salt for 15 minutes until done. Remove from heat and thouroughly drain in a colander.
    3. To this potato mash then add the cream, horseradish, butter, chopped sping onions and pepper and salt to taste.
    5. Stir through and serve.
