Sour Cream Mashed Potatoes

Sour cream and Mashed Potatoes: surely the eighth wonder of the world! This mash will find you going back for seconds and thirds – it is just delicious. I recommend using freshly ground black pepper over the powdered pepper that you can buy, as ground pepper has more flavour. i find also that the ‘crunchy’ texture complements the potato mash’s smooth consistency.


Ingredients:
8 – 10 medium sized white potatoes
1/2 cup of sour cream
6 tablespoons of butter, melted
2 teaspoons of pepper
1/2 teaspoon of salt

Method:

    1. Peel the potatoes and cut into 1-inch portions.
    2. Place into a pot, cover with water and bring to the boil.
    3. Reduce the heat and simmer the potatoes until done – approx 15 minutes
    4. Place the potatoes in a colander and drain
    5. In a large bowl add the butter, sour cream, salt and pepper and mash using vigorous stabbing motions.
    6. Serve immediately and enjoy!
