There’s nothing finer than the smell of some roasted garlic wafting from the kitchen oven. That is unless your roasting coffee beans – they smell pretty darn good too! Roasted garlic mashed potato is a sure fire winner, both in taste and smell. Enjoy with nice glass of sauvignon blanc or a crispy chardonnay.
Ingredients:
1 kilogram (2 lbs) of potatoes
1/4 cup of garlic cloves
1/4 cup of sour cream
4 tablespoons of butter
Olive oil
Milk as required for good consistency
Salt and Pepper to taste
Method:
    1. Pre-heat the oven to 180C (350F)
    2. Separate the garlic into individual cloves, place on a sheet of aluminium foil, drizzle with olive oil, and wrap tightly.
    3. Cook in the oven for approx 30 – 45 minutes. Remove from oven
    4. Once the garlic has cooled remove the skin of the cloves and mash with a fork
    5. Peel and slow boil the potatoes for about 20 minutes in salted water. Remove from heat and drain in a colander.
    6. In a bowl combine the potatoes, the roasted garlic mash, and all other ingredients and mash. Add milk to adjust consistency as required and salt and pepper.
    7. Serve with a nice piece of steak pie and your done. Enjoy!
