Most of these mashed potato recipes can be frozen ahead of time. Freezing Mashed potato can be a real time saver - the next time you make some mash simply double the quantities and put the second portion into the freezer so that’s its ready for use at a later date.
When reheating just take the potatoes out of the freezer the morning you want to use them. Adding a few teaspoons of butter to the top will help re-hydrate them, cover with foil and cook in a moderate oven for about 20 minutes (or until warmed through).
