Ingredients:
6 large mashing potatoes, peeled and cubed
1 small red cabbage, roughly chopped
1 head of garlic
1 teaspoon of olive oil
Butter, salt, pepper, and milk to taste

Method:1. Slice the tip off the head of garlic and set the head in a pan and drizzle with Olive oil.
2. Place garlic into a medium to hot oven and roast. Once done, squeeze the roasted garlic out of each clove's skin and mash.
3. Put the potatoes and cabbage in a large pot and cover with water. Cover the pot and bring to a boil. Add a large pinch of salt and boil, uncovered, over moderately high heat, until fork tender, about 25 minutes. Drain, and return the potatoes and return to the pot (leave cabbage aside)
4. Mash the potatoes with the garlic, add salt and pepper milk as required
5. Add the cabbage and stir through. Serve and Enjoy
