This is a smooth, textured and flavourful mash recipe. Try out the White Cheddar and Green Chilli Mashed Potatoes… what are you waiting for – it’s delicious!
Ingredients:
10 large potatoes, peeled and cut into chunks
2 cloves garlic, peeled and sliced
2 rashers of bacon, diced
1 cup of White Cheddar cheese, grated
1 medium sized onion, finely chopped
1 can of chopped green chillies
4 tablespoons of butter
3/4 cup of milk
Method:1. Add the potatoes and garlic to a large pot with enough cold water to cover them by an inch or so. Add salt and bring the water to a boil. Cook until the potatoes are tender when pierced with a knife. (About 15 minutes)
2. Sauté the bacon and onions until done in a small frypan, stir in green chillies, and for cook 1 minute more to warm through and set aside.
3. Drain potatoes and discard garlic. Mash the potatoes
4. Beat in the butter milk and cheese.
5. Folf in the chilli mixture, season to taste and enjoy
