Turn your leftover mashed potato into a delicious treat. This Potato Mash Soufflé is bound to make your heart beat.
Ingredients:
1 cup of cold leftover cold mashed potatoes
2 tablespoons unsalted butter
3 tablespoons bread crumbs
2 eggs, separated
3 tablespoons thick cream
3 tablespoons grated Parmesan cheese
1/2 teaspoon minced garlic
salt and pepper
nutmeg
Method: 1. Preheat the oven to 220C (470F)
2. Butter oven dish and coat with breadcrumbs and set aside.
3. Wisk the potatoes together with the egg yolks, cream, Parmeasan cheese, and garlic
until creamy, and set aside.
4. Combine egg whites and pinch, then wisk with electricbeater until the whites are stiff.
5. Fold egg whites into potato mix and transfer to gratin dish and bake until
golden brown.
6. Sprinkle with nutmeg and enjoy
