Wonderfully aromatic, the garlic roasted parmesan mashed potato is hard to beat.
Ingredients:
6 mashing potatoes, peeled & quartered
2 teaspoons salt – divided
1/4 cup whipping cream
1/4 cup shredded Parmesan cheese
3 tablespoons butter
1/3 cup fresh parsley -- chopped
1/2 teaspoon freshly ground pepper
2 heads garlic
Olive oil
Method: 1. Cut off the pointed ends of garlic bulbs and place garlic on a piece of foil. Drizzle with olive oil and fold foil to seal
2. Bake on high for one hour; then cool to touch.
3. Squeeze the pulp from the garlic cloves and set pulp aside.
4. Bring the potato in water to boil for 20-25 minutes until potato is tender and drain.
5. Mash the potato or press through a ricer
6. 7. Season with pepper and slat to taste and enjoy.
