I love reading newly acquired cookbooks. I was especially excited when a friend recently made me aware of this fantastic cookbook - 50 best mashed potatoes (365 series ways) - a cookbook all about making mashed potatoes!
The book is full of terrific and simple mash recipe ideas, all of which have both clear and concise instructions. There is a nifty little introduction as well as some interesting potato facts (using potato cooking water in bread etc). There are also recipes for using leftover mashed potato and a chapter dedicated to mashed potato combinations with other vegetables (carrots, broccoli etc…). It now stands proud amongst my (growing) cookbook collection.
The 365 50 best mashed potato series ways cookbook is essential in any mash lovers kitchen!

Indian Mashed Potato Patties |
Indian Mashed Potato Patties make a great snack, or a fantastic lunch when served between 2 slices of bread, a little butter and some sweet chilli sauce. This recipe could be make this from scratch, but could also be made using leftover mashed potatoes - if you’ve got any!
Ingredients:
6 mid-sized potatoes
Milk, to good consistency
1 tablespoon of butter
1 teaspoon of curry powder
1 teaspoon of cumin seeds
1/3 cup of frozen green peas, thawed
1 egg
1 - 2 tablespoons of flour
pepper to taste
Method: 1. Peel the potatoes, and wash carefully.
2. Cook potatoes until done, then strain
3. Mash the potatoes with butter whilst still hot and gradually mix in the milk
4. Add peas, cumin, curry and pepper to taste, mix through
5. Add egg and flour to thicken (adjust flour quantity should mixture be to runny)
6. Form mixture into patties and fry in a little oil.
7. Serve with some sweet chilli sauce to the side and enjoy!

Fried Mashed Potato |
If you’ve got some leftover Mashed Potatoes sitting in the fridge ready to throw out, don’t be wasteful – make it into something else! Frying your leftover mashed potato is the perfect solution.
Ingredients:
Leftover mashed potatoes
Flour
Oil
Method:
    1. Between two hands mold the leftover mashed potato into small round balls
    2. Roll the balls around in a little flour, until fully coated
    3. Fry the balls in hot oil for 10 -15 minutes – until golden brown
Serves 4
