Green Peppers with Potato Mash Stuffing

A great way to serve your Mashed Potatoes – and easy too!


Ingredients:
4 large Green bell peppers
1/2 Onion, finely diced
1 Red pepper, finely diced
2 tablespoon of Olive oil
Salt and pepper to taste
Mashed Potato

Method:

    1. Preheat oven to a medium-high heat.
    2. Deseed the green peppers and gently parboil for 3-4 minutes and set aside.
    3. Sauté the onions and red pepper in oil until soft.
    4. Stuff the peppers with your pre-made Mash, and sautéed onion-red peppers and place onto an ovenproof dish.
    5. Place in oven and cook for 20 minutes
    6. Serve immediately and Enjoy
