Make a point to make yourself some Cheesy Potato Soufflé Mash. Try to share it with your family or friends (if you can!)
Ingredients:
8-10 mashing potatoes
3/4 cup of milk
1 tablespoon of Dijon mustard
3/4 cup of sharp cheddar cheese, grated
1/2 cup of Swiss cheese, grated
1/4 cup of Parmesan cheese, grated
3 large scallions, diced
1/4 cup of onions, chopped
3 large eggs, separated
salt and pepper to taste
Method:1. Preheat the oven on a medium to high temperature.
2. Peel and quarter the potatoes. In a large saucepan, cook the potatoes in enough water to cover for 20 minutes or till tender. Drain off the liquid.
3. In a large bowl add the milk, mustard, cheese, scallions, onions and egg yolks. Season to taste. Thoroughly mash until well blended.
4. In a small bowl, whip the egg whites until stiff peaks form.
5. Gently fold beaten egg whites into mashed potato mixture.
6. Spoon the mixture into a buttered ovenproof dish for 30-40 minutes or till puffed and golden on top
7. Turn mixture into a buttered baking dish, top with cheddar and cook in the oven till top browns up.
8. Serve and enjoy.
