Mashed Potato Candy

Heres another interesting way to use up any leftover mashed potato that you’ve might have sitting the fridge. The end result is something like a dense chocolate bar - only its got mashed potato in it! I know its sounds like an impossible combination - but it’s actually quite delicious. Straight out of the fridge it is great for a hot summer day. So go on, what are you waiting for? Mashed Potato Candy beckons!


Ingredients:
1/2 cup of leftover mash potato
2 cups of icing sugar
1 teaspoon of vanilla essence
4 squares of dark chocolate, melted
1 tablespoon of butter
1 tablespoon of peanut butter
1 cup of desiccated coconut

Method:

    1. In a bowl mix the leftover potatoes, vanilla essence and icing sugar and beat thoroughly until the mixture is combined
    2. Add coconut, peanut butter and continue to stir. At this point the mixture should be quite stiff. If not just add a little extra sugar, stirring the whole time
    3. On a greased loaf pan, pack the mixture in tightly and drizzle melted chocolate over the top. Chill in the refrigerator until the chocolate has set.
    4. Cut into serving slices and Enjoy!
