Carrot Mash

When making this carrot mash recipe I prefer to leave the carrots unpeeled, not only does it improves the flavour - but it retains all the vitims stored within the skin of the vegtable.


Ingredients:
4 large potatoes, peeled
6 large carrots
2 onions, finely sliced
2 teaspoons of Butter
A dash of milk
1 - 2 teaspoons of nutmeg
Salt and pepper

Method:

    1. Cut the carrot and potatoes into even-sized chunks and with the onions cook in a large pan of boiling salted water for 20-25 minutes, until softened.
    2. Drain the water from the vegetables and place back into pan.
    3. Add milk, butter and nutmeg and Mash well.
    4. Season to taste with salt and pepper (and more nutmeg if required - yum!)
    7. Enjoy your carrot mash!
