Sweet Potato Mash with Celeriac

Celeriac is not as popular as some other root vegetables (ie: the potato), but has a celery-like flavour, which is great in soups and good for mashing. Also (quite importantly!) it can be used in tomato drinks – bring on that Bloody Mary! Check out wikipedia’s entry on the celeriac for more information. Ingredients:
6 - 8 sweet potatoes
2 Celeriac roots, peeled and cubed
1/2 cup of cream
2 tablespoons of butter
Nutmeg (fresh)
Olive Oil

Method:

    1. Preheat the oven to 200C (400F).
    2. Place the celeriac and potatoes in a saucepan and cover with cold water; add a pinch or two of salt.
    3. Bring to boil and over medium heat simmer for 15 to 20 minutes, until the celery root and potatoes cooked. Drain immediately
    4. In the same saucepan pour the cream and (without boiling) warm through. Return the celeriac and potatoes to the pan. Remove from heat.
    5. Mash!
    6. Grease up a shallow ovenproof dish and place the mixture in it. Dot the top with some butter and sprinkle some freshly grated nutmeg over the top.
    7. Bake in oven for 20 minutes, until lightly browned on top
    8. Drizzle with a healthy dose of olive oil and serve. Enjoy
