Red Skin Mashed Potato Recipe

The Red Skin Mashed Potato Recipe is a great base, which can be used as a starting point for many other creations, limited only by your creativity! Try omitting the scallions and replacing them with some sautéed mushrooms. Yum!


Ingredients:
12 large potatoes
2 scallions, thinly chopped
2 cups of milk, warmed
1 cup of butter, softened
Salt and pepper to taste.

Method:

    1. Peeled and cut the potatoes into 1-inch chunks
    2. Cover with water add a pinch of salt and bring to the boil, then reduce heat and simmer for about 15 minutes or until potatoes are tender.
    4. Drain and return to the pot.
    3. Add milk and butter and mash until well incorporated
    4. Stir through the scallions, and season to taste
    5. Enjoy your Red Skin Mashed Potato.
