Carrot Stump is a traditional Dutch recipe, often served with sausage or meatloaf. My parents being Dutch meant that I grew up on this stuff. It’s a hearty meal, which is great for wintertime.
Ingredients:
4 potatoes washed, peeled and chopped
6 large carrots peeled and chopped
2 onions finely diced
2 -3 teaspoons of nutmeg
a dash of milk
pepper and salt
Method:
    1. Place the pre-prepared onions, carrot and cover with water
    2. Cook the vegetables until done and strain
    3. Add the milk and stir and Mash thoroughly
    4. Season with pepper and salt – and the magic ingredient – the nutmeg
    5. Enjoy
