Parsnip Mash

I love my parsnip mash served with a lovely piece of grilled flake, and a little sprinkle of dill over the top. Yum!


Ingredients:
4-5 large parsnips
1 tablespoon of wholegrain mustard
1 tablespoon of butter
2 tablespoons of plain yoghurt

Method:

    1. Cut the parsnip into small pieces, to reduce cooking time.
    2. Steam the parsnips for about 15 -2 0 minutes till very tender.
    3. In a pot add the cooked parsnips, butter, yogurt and mustard
    4. Mash and enjoy serve hot.
