Blue Cheese Mashed Potatoes

The addition of the Blue cheese adds a wonderful tang to mashed potato. This mash recipe is definitely one of my favourites.


Ingredients:
8-10 large mashing Potatoes
1 Cup of Heavy Cream
5 Tablespoons of Butter
2 Tablespoons of Crumbled Blue Cheese
1 Tablespoon of Fresh Parsley, chopped
Salt and Pepper to taste

Method:

    1. Place potatoes in a large pot and cover amply with water.
    2. Bring to a boil over medium-high heat and continue to cook until the
    potatoes are very tender, 20 to 25 minutes approx.
    3. Drain the potatoes in a colander and return the potatoes to the pot and cook over low heat 30 seconds to evaporate any water that may be remaining on the potatoes.
    4. Mash the potatoes in the pot with a hand masher whilst slowly adding the heavy cream and butter to the mash.
    5. Fold in the blue cheese, parsley. Add pepper and season to taste, serve and enjoy
