Mashed Potato Soup

Another great way to use up your leftover mashed potatoes is to make a Mashed Potato Soup out of it. I won’t preach too much, but around the world millions of people go starving – so wasting food is pretty high on my pet hates list. The Mashed potato soup is a great winter warmer.


Ingredients:
2 1/2 cups of (leftover) mashed potatoes
1/2 cup of minced onion
1 small stick of celery (including leaves), finely chopped
1 carrot, finely grated
2 tablespoons of butter
2 cups of chicken broth
1 teaspoon of white-wine vinegar
1/3 cup of chopped parsley leaves
1/4 teaspoon of dried rosemary



Method:
    1. Brown the onion in a large saucepan,
    2. Add the celery, carrot and butter and continue to cook over low heat
    3. Stir in the chicken broth and the rosemary and bring to the boil
    4. Add the vinegar and the parsley
    5. Stir through - add salt and pepper to taste
    6. Enjoy your un-wasted potato mash!
