I’ve probably mashed more potato than I’ve got whiskers on my face. The mashed potato is a favourite dish to many people, but too many servings can start to get you on the wrong side of large. Apart from going easy on the serving sizes another suggested remedy is this skinny mashed potato recipe. You'll be licking your masher clean!
Ingredients:
8 medium potatoes, peeled and cut into 1-inch chunks
3/4 cup of skim milk.
1/2 cup of low-fat plain yoghurt
Pepper and salt to taste.
Method:1. Place the potatoes in a medium saucepan and cover with cold water; add a teaspoon of salt.
2. Bring to boil over medium heat and simmer for 20 minutes or so, until the potatoes are very tender. Drain
3. Return the potatoes to the saucepan and add the yoghurt and skim milk
4. Mash and season.
5. Serve hot.
