Paprika is always a wonderful addition to any Mash – its spiciness adds a welcome contrast to the creamy texture in this Mashed Potato Casserole. But what watch out – if your not to careful with the quantities it can add quite a punch!
Ingredients:
1kg (3 lb) of potatoes, peeled and halved
85g (3 oz) of cream cheese
1/2 cup of sour cream
11/2 teaspoons of garlic salt
2 tablespoons of butter
Paprika to taste
Parsley to taste
Pepper to taste
Method:
    1. Mix together the cream cheese, sour cream and garlic salt, add pepper to taste and set aside
    2. Pre-heat oven to 200ºC (400ºF)
    3. Drain and mash with a fork or potato masher
    4. Gradually add and stir through the sour cream mixture until forming a smooth consistency
    5. On a well greased casserole dish, spoon out the potatoes and dollop with butter
    6. Once finished sprinkle with the paprika and place in oven
    7. Cook covered for 25 minutes and for a further 10 uncovered to allow to brown
    8. Garnish with some fresh parsley sprigs, and Enjoy!

I am a huge fan of Cheese - anything with large quantities of cheese in it stands little chance of survival when I am around. I especially like this Cheesy Mashed Potato recipe. If you’re a fan of cheese, like me, you might add an extra 1/4 a cup of cheddar cheese. Yum!
Ingredients:
10 - 12 small sized potatoes
1/4 cup of butter
3 tablespoon of cream
1/4 cup of milk
3 tablespoons of cream cheese
1/4 cup of cheddar cheese
2 Eggs, separated
2 tablespoons of grated parmesan cheese
1/2 tablespoon of baking powder
1/2 teaspoon of pepper
1 teaspoon of salt
Method:
    1. Prick the potatoes all round with a fork and boil with their jackets left on
    2. When the potatoes are cooked then cut and remove the meat, and thoroughly mash
    3. Add the butter, baking powder, salt, pepper and cream, then beat until well blended.
    4. Place the cream cheese, cheddar cheese and milk into a saucepan on the stove and heat.
    5. Once cheese has melted gradually add the potato mixture 3-4 tablespoons at a time
    6. To this mixture then add the egg yolks followed by beaten the egg whites
    7. Pour into an ovenproof dish, sprinkle with Parmesan and place in a moderate oven for 15 minutes, or until golden brown on top
    8. Deal out and Enjoy.
