Mashed Carrots make a wonderful meal in their own right, but or if you’re a little low you could always mix in a few potatoes, such as this recipe. Carrot and Potato Mash is a great winter warmer – delicious and healty.
Ingredients:
6 Potatoes
4-5 Carrots
1 Cup of Sour Cream
1 Egg
1 1/2 Cups of grated Cheddar Cheese
1 Tablespoon of Butter
2 Tablespoons of English Mustard
Method:1. Peel the vegetables, dice and add to a pan
2. Place a lid on top and simmer over a medium heat for 20 minutes or so, checking periodically to make sure that the veggies are not sticking.
3. When done, drain and adding the egg, cheese, butter, mustard and cream, Mash
4. Place into an ovenproof dish and cook for 20 minutes
5. Serve whilst still warm

Golden Carrot and Potato Mash |
Carrots make a delightful mash, none more so than this delightfull Carrot and Potato Mash recipe, which makes a lovely golden colour mash. If desired, serve with a knob of butter on top.
Ingredients:
9 large mashing potatoes, peeled and cubed
5-6 carrots, chopped
8 green onions, thinly sliced
1/2 cup of butter
1 cup of sour cream
3/4 cup shredded cheddar cheese
Salt, pepper, nutmeg
Method:1. Place potatoes and carrots into a saucepan and boil for 20 minutes until the vegetables are cooked. Drain and remove.
2. Add Butter & sour cream and mash well.
3. Season with pepper and salt and lots of nutmeg.
4. In a frypan, sauté the onions in butter until tender and add to potato mixture.
5. Transfer into well buttered baking dish, sprinkle with cheese and bake uncovered on high for 20-30 minutes or until the top browns up
6. Enjoy your delicious Carrot and Potato Mash
